Reading macOS Preferences (such as theme) from the Terminal

Read light/dark mode preference:

> plutil -extract AppleInterfaceStyle raw ~/Library/Preferences/.GlobalPreferences.plist -o -
Dark

Dump all global preferences as XML:

> plutil -convert xml1 ~/Library/Preferences/.GlobalPreferences.plist -o -
